30 Day Clean Eating Challenge – Key Lime Kabobs with Pineapple and Peppers

This dish is full of flavor, quick, family-friendly, and just delicious! The flavors of lime, chili powder, garlic and honey all get along just great! I cut up chicken breasts in one inch cubes and tossed them in some lime zest, garlic, chili powder, salt and pepper. I skewered them and grilled them. I served it with sauteed colorful peppers, onions, and chunks of fresh pineapple and brown rice. When it is done, I drizzled a mixture of lime juice and honey on it all and WOW was this a winner! This is kid-friendly for sure! My 12 year old said it was the most amazing thing I have made lately…so there’s that!

Here’s what you need to serve 4:

1 pound skinless, boneless chicken breast, cut in 1 inch cubes

Zest of one lime

2 t garlic minced

1 t chili powder

1/4 t salt

Dash black pepper

Juice of the lime

1 T honey

chili powder to garnish and to saute with the peppers

Red bell pepper, sliced

Green bell pepper, sliced

Yellow bell pepper, sliced

1 onion,sliced

1 T olive oil

1 cup fresh pineapple chunks

Brown rice, cooked

1 lime cut in wedges to garnish

Mix the chicken and the next five ingredients in a bowl to coat. Set aside to let it marinate for a little while. In the mean time, cook the rice and slice the peppers and onions and cut up the pineapple. Heat up the olive oil in a skillet. Saute the peppers, onion, and pineapple till very soft. Season to taste with salt, pepper, and chili powder. Heat the grill on medium-high heat. Grill the chicken kabobs just a few minutes on each side till done. Mix the juice of the lime and the honey together in a small bowl with a whisk. To serve, Dip up some of the pepper mixture on the plate, top with the chicken kabobs, serve with the brown rice. Drizzle some of the lime juice and honey mixture over the whole dish and sprinkle with a little chili powder if you want. Garnish with a lime wedge. For a little added heat, season the peppers and pineapple with a little cracked red pepper as well. I loved this meal! It was light and refreshing, but packed with flavor and so pretty!
