30 Day Clean Eating Challenge – Maple Pecan Encrusted Salmon

If you like simple, healthy, and pretty darn impressive, this salmon recipe is for you! Who doesn’t like the flavors of maple and pecan together? I think most everyone does! I made this easy maple-pecan crumble to top some salmon , let it set for a while in the fridge, and baked it. It was delicious! I added a small amount of chipotle chili powder to the crumble mixture to add a little bit of sweet heat and it turned out great! It is easy enough for a weeknight and impressive enough for company! I hope you will give this a try! I served it with a baby greens salad and some sauteed brussels. Yum!

Here’s what you need:

4 4 oz. salmon fillets

1/2 cup pecans

3 T pure maple syrup

1 T apple cider vinegar

1 t smoked paprika

1/2 t chipotle chili powder

1/2 t onion powder

Salt and pepper to taste

Salt and pepper the salmon fillets to taste and place them on a baking sheet. Place all the rest of the ingredients in a food processor and pulse JUST TILL IT IS CRUMBLY. Do not over process, or it will become a paste. Carefully, spoon the topping evenly onto the salmon pieces, pressing it gently with the back of the spoon. Set this uncovered in the refrigerator for 2-3 hours ( at least an hour). Preheat the oven to 425. Bake the salmon uncovered for 10-12 minutes or until flaky. Do not over cook. That’s it! Enjoy!
